Cooking with Cannabis: Cannabis Condiments

It has been a little while since we did cooking with cannabis so it’s time to get back in the kitchen. Today we are going to have a look at cannabis condiments, the perfect accompaniment to a variety of meals. Cooking with cannabis can be a bit tricky when you’re trying to make full meals or baked goods. Also, sometimes it’s nice to be able to add as much or as little as you feel like when you feel like it. By making cannabis condiments you can easily measure out exactly how high you want to be at the time. Rather than having to figure it out before you start cooking. These are some easy and hassle-free recipes to make a variety of weed condiments. 

 

Before starting you will want to make the cannabis bases that you will use to make your condiments.

 

The simplest way to make cannabutter is to use 7 – 10 grams of decarboxylated cannabis per cup of butter. The weed will just need 30 – 40 minutes in the oven at around 115 degrees celsius. Remember to shoogle the tray every 10 to 15 minutes. Once that’s done grind the weed up, melt the butter, and add the cannabis. Then let it simmer for 2 – 3 hours before straining the butter through a cheesecloth. Then you simply refrigerate the butter and voila, simple cannabutter. Now you can move on to using it to make your sauces and condiments. 

 

To make cannahoney you place your decarboxylated cannabis into the cheesecloth and tie the top up with string. Put it into a glass jar and pour in a healthy measure of honey. Put the jar into a pot, submerge it in water, then put the whole thing into the oven at around 100 degrees celsius and leave it to gently cook for about 8 hours. 

 

Cannaoil is also made with decarboxylated cannabis then heat the oil and cannabis together in a closed container like a mason jar then submerge it just like you would the honey. Essentially the rest is the same as the previous instructions. 

 

Ketchup

 

Ingredients: 

 

1 Onion

4 Cloves of Garlic

Tomato Paste

2 tsp of Curry Powder 

½ tsp of Cayenne Pepper 

1 tsp of Mustard

1 Can of Chopped Tomatoes 

½ Cup of Brown Sugar 

¼ Cup of Balsamic Vinegar 

2 tbsp of Canola Oil 

4 tbsp of Cannahoney 

 

Over medium heat add the oil, garlic, onions and a pinch of salt. Sweat them until they become translucent. Squeeze in some tomato paste and coat everything, cook for another 5 minutes then add the vinegar. Reduce the heat and add the tomatoes then the brown sugar. Then keep cooking it for another 20 – 30 minutes and let it reduce until it’s the desired consistency. Let it sit for 5 minutes after cooking before popping in the blender and blending till smooth. If you don’t have a blender you can use a hand blender. 

 

Balsamic Vinagerette 

 

This option is fast, easy and effective whilst also being extremely versatile. Because it is oil-based it will store very well and will be waiting for you when you fancy something healthy and fun. 

 

½ Cup of Dijon Mustard 

Pinch of Salt

¾ Cup of Cannaoil 

¼ Balsamic 

1 Clove of Crushed Garlic

3 tbsp of Brown Sugar 

Pepper

 

Throw everything except the balsamic and the cannaoil into a bowl and mix it thoroughly. Then add in the final two ingredients and voila, a little extra spice for your salad. 

 

Honey Mustard

 

Much like the vinaigrette, the honey mustard is extremely easy to make. It has very few ingredients and doesn’t require any cooking. 

 

½ Cup of Dijon Mustard

½ Cup of Whole Grain Mustard 

½ Cup of Honey 

2 tbsp of Cannahoney

1 tsp of White Wine Vinegar 

Pinch of Salt 

 

As I said this one is extremely easy all you have to do is add everything together and whip it until it’s nice and smooth. I would recommend this one for sandwiches, burgers and hotdogs (or the veggie version). 

 

Mayonnaise 

 

Making your own fresh mayo is always a good idea. For me, it is the condiment that tastes the most different when it is homemade versus shop bought. While you’re making it you may as well add just a touch of THC to brighten up your lunchtime sandwich. 

 

2 tbsp of Dijon Mustard

2 Egg Yolks

2 tsp of Salt

1 ¼ Cups of Canola Oil 

2 tbsp of Cannaoil 

4 tbsp of White Wine Vinegar 

 

In a bowl mix together the egg yolks, mustard, salt and vinegar. Continue mixing until they start to real a mayo-like consistency. While mixing pour in both the oils and fold them fully into the rest of the mixture. If the mixture gets too thick or stodgy you can add a little warm water to loosen it up. 

 

Barbeque Sauce 

 

Finally let’s make the perfect accompaniment to a summers afternoon, barbeque sauce. This is the ideal addition to a summer barbeque. With meat or veggie alternatives this sauce is not only delicious but will add a pleasant haze to the day. This is probably one of the more involved sauces and requires quite a few ingredients, but it’s worth it. 

 

2 Diced Onions

¼ Cup of Canola Oil 

3 tbsp of Cannabutter 

2 tbsp of Wholegrain Mustard

2 tbsp of Worchestershire Sauce

1 tsp of Cumin

3 tbsp of Tomato Paste 

½ Cup of Brown Sugar

1 tbsp of Salt 

2 tbsp of Smoked Paprika

4 Cloves of Crushed Garlic

1 Cup of Ketchup

¼ Cup of Molasses 

½ Cup of Apple Cider Vinegar 

½ Cup of Bourbon 

 

Put the oil, onions and salt into a pot over medium heat until the onions begin to turn translucent. Add the garlic and continue to cook for two minutes, being careful not to let the garlic burn. Add the tomato paste, cook for two more minutes, then take the pot off the heat and add the bourbon. Return to the heat, reduce by half, and add the brown sugar then cook until the sugar is fully dissolved. 

Add the spices, cook for a further 5 minutes, then add the ketchup, Worcestershire, mustard, vinegar and molasses. Reduce the heat and let it all simmer for 15 minutes. Once it’s all ready we let it cool a little and blend it, adding the cannabutter in small increments until the mixture is completely smooth.
