In this final installment of Hemp The Superfood we are going to go through some fantastic main meal options that involve hemp, especially vegan ones. As I mentioned in part 1 hemp is an incredible supplement for people who don’t eat meat or don’t eat any animal by product. This is largely because it is filled to the brim with not only protein but fibre and all sorts of important vitamins and minerals. Vegan food doesn’t need to be dull so we are going to look at some yummy options that are healthy and delicious. 

 

Vegan Meatball Sub

 

I found this recipe in a few different places and it looked both delicious and easy to make. As someone who doesn’t eat meat one of the first things I missed was this sort of delicious comfort food that is so often meat and dairy based. I haven’t tried making these yet but it certainly looks very tasty so here’s the recipe. 

 

You will need: 

 

  • 4 tbsp Hemp Hearts
  • 200g Mashed Potato 
  • 2 tbsp Soy Sauce 
  • 125 ml Veggie Stock 
  • 6 Garlic Cloves 
  • ½ Onion 
  • 2 tsp Smoked Paprika 
  • 2 tbsp Vegan Parmesan 
  • 200g Wheat Gluten 
  • 2 tbsp Dry Oregano
  • ½ tsp Fennel Seeds
  • 65g Fresh Parsley
  • Salt and Pepper to Taste 

 

For the rest you’ll need: 

 

  • Marinara sauce (premade is fine unless you already have a recipe you love)
  • A decent sized roll or baguette 
  • Half a lemon
  • More vegan parmesan if you like 
  • Some rocket

 

Heat the oven to 180 degrees celsius before you get started on your mixture. 

Grab a decent sized mixing bowl combine your potato, soy sauce, grated onion and garlic, veggie stock, hemp, parsley and other spices. Use your hands to mix this all together until you have a dense squishy ball of goodness. 

Put some baking paper on a pan and oil up your hands. Then tear away parts of the dough and roll it into balls roughly the size of any average meatball. 

Pop these in the pre-heated oven for about 15 minutes before flipping them over and leaving for another 15 minutes. 

Then heat up your marinara sauce in a pan and add your meatballs to simmer for a few minutes. 

I recommend toasting your roll, tossing the rocket in the lemon and then smearing your roll with a good helping of the marinara sauce on the bottom bun. Then put down the rocket, add as many of the balls as will fit comfortably, top with more sauce and the rest of your vegan parmesan. 

There you go, a delicious vegan treat for those days where you just don’t feel like eating healthily. 

 

Hemp Burger

 

A great way to utilise hemp in a veggie or vegan diet is to use it to make burgers. Of course, veggie and vegan burgers are a highly contested issue since they are either amazing or terrible and I haven’t made these but they’ve had pretty good feedback. This recipe is vegan but obviously you can put as much non vegan stuff on it as you want, I plan to. So much cheese, oh yeah, anyway. 

 

You will need: 

 

  • 1 Sweet Potato 
  • 200 g Hemp Seeds
  • 1 Can Chickpeas
  • 2 Spring Onions
  • 1 tbsp Ground Flaxseed 
  • 2 Cloves Garlic
  • 100 g Breadcrumbs
  • 2 tbsp Yeast Flakes
  • 100g Coriander (or parsley if you are one of those people who thinks coriander tastes like soap)
  • Pinch Salt 

 

The recipe thinks you should microwave the sweet potato but I reckon it would be way nicer if you roasted it first. So that’s what I’m going to do but for the sake of argument you can peel it and prick it a few times then put it in the microwave for 3 minutes and let it cool before chopping it up. 

I reckon chop it up, cover it in olive oil, salt and pepper then put it in the oven at about 180 degrees C for 10 – 15 minutes until it’s soft then let it cool. That should give a better flavour to the burgers. 

Then you want to put your potato and chickpeas into a food processor and work till they are combined. 

Then add your hemp seeds and everything else into the food processor and combine. If you like you can put an egg in to help it bind. 

Heat a frying pan with olive oil over a medium flame. 

Then shape the mixture into patties ready for frying. Pop them in the pan and fry on each side for around 5 minutes a piece. 

Leave to cool for 10 minutes and serve with whatever you want in whatever bun you want! 

 

Hemp Carrot Cake 

Finally let’s do a pudding, one that I think will work well with the taste of hemp seeds. 

 

What you need:

 

  • 4 Grated Carrots
  • 175g Light Brown Sugar 
  • 120 ml Hemp Oil 
  • 300ml Oat Milk (or regular milk)
  • 275g Plain Flour 
  • 2 tsp Baking Powder
  • 1 ½ tsp Baking Soda 
  • 50 g Shelled Hemp Seeds
  • 2 tsp Vanilla Essence 
  • 100 g Hemp Flour 
  • 100 g Orange Zest 
  • 100 g Chopped Walnuts 
  • Pinch of Salt 
  • 2 tsp Cinnamon 
  • 1 tsp Ginger 
  • 1 tsp Nutmeg

 

Grease a medium sized cake tin and set your oven to 180 degrees C. 

Put the oil, zest, sugar and vanilla into a bowl, whisk together, then add the milk and grated carrots. 

Then combine all of your flours, baking soda and powder, as well as the cinnamon, nutmeg and salt. 

Fold the dry stuff into the wet stuff along with the walnuts and seeds. 

Then just bake for 15 – 20 minutes. 

 

Icing: 

 

  • 350 g of margarine (dairy free if you like)
  • 1 tsp Vanilla Extract
  • 380g Icing Sugar 

 

Cream the margarine first to make sure it’s nice and, well, creamy. 

Then add the icing sugar and vanilla extract, and whisk till fully combined. 

Then you can apply it to the cake however you like once it has cooled, maybe use an icing bag. 

Enjoy these tasty and surprisingly healthy treats!!
